About him

Nicola Gasparre is a predoctoral scholarship holder at University of Valencia. He is working at the Institute of Agrochemistry and Food Technology (IATA-CSIC) in the Cereals and Cereal Based Products group under the supervision of Prof. Dr. Cristina M. Rosell. After his master’s degree in Food Science and Human Nutrition from University of Milan he was working in the research and development department in a gluten free pasta manufacturer. In the company an alternative gluten free sources were investigated to produce new extruded flours and pasta. Actually his research is focused on setting up nutritious and healthy gluten free foods that meet the needs of the celiac population, restoring nutritional deficiencies.

Making gluten free noodles is a big challenge only by the knowledge about the ingredients and process could make us successful. All these things will be discussed in my talk presenting the tigernut noodles as a case study.
